I hope this can help someone else. All the settings were correct on GCP. I just never realized that I needed to update the URI to reflect that I was using the private endpoints. I had to go to MongoDB to obtain the new URI (in my case, replacing cluster1 for cluster1-pl-0) and then I had to go to GCP Secrets Manager in order to create a new version of the URI. As simple as that.
