Set the date on your PC to time in the future. I used 2055. Use Edge default browser function to add the IE site. Edge will now confirm that the site was added in 2055 and will expire 30 days later in 2056. Set the PC to the correct date and Edge still shows the site added in 2055 and will expire in 2056. I am waiting to see what happens after 30 days but am hopeful that there is no clever checking in Edge to correct the 2055 expiry date that it is still showing. I did the date changes in a short time interval and with other apps closed in case the incorrect date could damage other functions on the PC.
