Since this is a new feature, Google Sheets Apps Script doesn't currently provide a direct way to create a Sheet Table. There is a pending Issue Tracker Post related to this. I suggest hitting the +1 button to signify that you also have the same issue/request and consider adding a star (on the top left) for Google developers to prioritize the issue.
