This is a old question but it keeps coming up in searches. For a more up-to-date wireshark BLE 5.x sniffer, look at https://github.com/nccgroup/Sniffle It needs firmware reflashed onto various TI chipset developer boards but captures can be done directly from wireshark. Many of the Nordic and older sniffers were never updated beyond BLE 4.x TI also has a sniffer of their own for some boards, but it wasn't updated for BLE 5.x
