Themes can be changed under Settings/Preferences->General->Appearance->Theme drop-down.

It's possible newer versions may respond to your choice of light or dark mode in your OS settings, but in that case you should be able to override the default using these settings.

I believe the settings are found under "Help->Preferences" on Windows; they're under "Eclipse->Settings" on Mac.
