These are Cursor inline suggestions (AI). Here's how to disable it:

ctrl + shift + p

type cursor tab, and look for Cursor Tab: Disable

press enter.

Alternatively, at the bottom right you have a Cursor Tab button that you can click to toggle it on and off.
