The solution to the issue is hidden behind the gear in the top right of the email address box under “Contact Information.”

The signup process via email is not considered “authentication” but “verification” of the email and uses the default method “Email verification code.” To use the email_link method, the checkbox for “Email verification link” needs to be checked.
