Ok found it !

Cmd+Shift+P to get the command palette on my VsCode, then Local History, Find and Restore.

Then, I have a list of all of the files and the date of last edit.

Click on it, click on the date you want.

I did not found a trick to get all of the folder at once, but better than nothing.
