I'm very, very late, but I found this question in 2025 and then I've found an interesting solution to adjust text size on the launch screen.

You can't have custom fonts and you can't have any logic to adjust font size on the launch screen. What you can do these days though, is add an SVG file with the text and then use autolayout to scale it.
